Our Mission: Explore the synergies between microbial solutions and enzymatic solutions in industrial biotech in support of Lesaffre’s Mission of Working together to better nourish and protect the planet

Our Approach: In close collaboration with different teams in Lesaffre R&I organization, we leverage our expertise in enzymology to develop and characterize enzymatic solutions as part of a wide portfolio of fermentation applications

Our Scope: We use our enzymology expertise to develop biotechnology solutions for industrial applications including baking, brewing, bioethanol, flavors and fragrances, nutraceuticals, food and feed, pharmaceuticals



o    Combine application relevant information with enzymology expertise to develop enzymatic solutions in a wide range of applications, considering the interactions between enzymatic activities, substrate biochemistry, environment factors and composition, and potentially other microbial solutions present at application level. A previous experience within baking applications would be preferred

o    Develop new enzymatic assay to screen and/or characterize enzymatic activities considering application relevant aspects, in strong collaboration with the Microbiology, Bacteria Platform, Analytics, Data sciences and BioFoundry teams, and the different Lesaffre business units application R&D teams

o    Develop and support enzyme/protein purification and fraction characterization from microbial cultures/biomass, support formulation of an enzymatic product, develop formulation mixture with other ingredients in food/feed applications, and determine stability of enzymatic solutions in a range of conditions depending on the application

o    Independently troubleshoot technically complex problems, and propose solutions or experimental plans to resolve or correct for them

o    Maintain high-quality documentation of your work and discoveries, in the forms of written reports, technical presentations, electronic lab notebooks, internal database records, code comments, and software documentation

o    Collaborate with multiple stakeholders in R&I organization and Lesaffre business units R&D teams in the development of biotechnological solutions at Lesaffre


o    MSc at least +2 years of experience, PhD or equivalent degree in biochemistry, life sciences, food science, industrial microbiology, or another relevant field, with interdisciplinary work.

o    Wet-lab skills in enzymatic assay development and enzymatic characterization with a perspective from industrial application are strongly preferred. Molecular biology skills for enzyme/protein heterologous expression and purification are a plus, but not required.

o    First-hand technical experience in at least two of the following areas: biochemistry, enzymology, enzymatic assay development, enzyme purification and characterization, enzyme formulation, enzymatic hydrolysis processes, protein/enzyme bioinformatics; proteomics, sequence analysis, synthetic biology, and protein engineering

o    Experience in applied enzymology with a proven track record of delivering innovation through collaboration with other areas such as fermentation, application R&D, business development, strain engineering, screening, analytics, and data science.

o    Experience in the development of innovative enzymatic applications in the baking industry, new formulations of baking ingredients, and a good understanding of baking applications and industries over the world are a plus.

o    Experience in use of statistics for data analysis and statistical design of experiments, facility in using statistics software like Minitab, SPSS, JMP, or with scripting in data science programming language like R or Python are desired. User level experience with best practices for collaborative software (electronic lab journal, laboratory information management systems, good documentation habits) are desired

o    Demonstrated ability to meet the demands of multiple concurrent projects

o    Strong curiosity of, and comfort working in, areas of biology previously unknown to you and, at times, your peers
